It's almost been a week and I'm still alive. I'm proud to say I haven't died due to malnourishment, which I consider a huge accomplishment.
I've had a few moments of weakness and the worst was going out to a restaurant with friends for a few drinks on Thursday night. I swear the pitchers of beer were calling my name. However, I survived and ate my first bun-less burger. After that experience I wondered why I ever ate a bun in the first place? What a totally useless thing to eat.
St. Patrick's day festivities haven't been easy either with house parties.. Going to have to figure out a way to overcome the party hurdle, tough when you can't eat anything on the table.
This week I've found myself constantly reading labels like a crazy person because I want to get through a solid few weeks cheat free. If I cheat now... I have no hope! So I'm proud I didn't cheat last night because it would have been exceptionally easy.
It hasn't been as bad as expected but my first Gluten Free bagel experience is never going to live up to a Great Canadian Bagel...that's for sure. The bread also looks like something from outer space but when you put enough peanut butter on it you have no idea.
To date I've cooked more meals than I ever thought was possible and I packed my lunch every day for work -- Shocking. I've also been to the grocery store three times since I started this. That HAS to be a record.
It's going to take some serious time to adjust to this but so far this is something anybody could do.
